She also reduced her intake of red meat and began eating grilled fish twice a week. Olive oil became one of the most important ingredients in her kitchen, replacing some of the butter and unhealthy fats she had previously used.

Fresh and dried herbs such as basil, oregano and parsley helped her add flavour without relying heavily on salt. These changes allowed her to continue enjoying satisfying meals while making choices that better supported her health.

Thelma did not count calories, measure every portion or follow complicated food rules. She focused on preparing balanced meals with love, purpose and fresh ingredients.

The results did not appear immediately, but Thelma remained consistent. Over the next few months, she gradually noticed positive changes in her health and daily life.

For Thelma, the Mediterranean diet is not a short-term programme or a temporary solution. It has become a sustainable lifestyle that helps her care for both her body and her relationship with food.

“It’s not a diet,” she says. “It’s a way of living that reminds me I’m worth taking care of.”
