Alba Rivers’ Favorite Low-Sugar Vegan Desserts

Alba Rivers never had much of a sweet tooth until she removed dairy and refined sugar from her diet. Laughing about the sudden change, she says, “Before I knew it, I was craving chocolate cake as though it were oxygen.”

Switching to a plant-based diet helped her feel better overall, but desserts quickly became a challenge. Many store-bought vegan treats contained large amounts of coconut oil, refined sugar, or highly processed ingredients that she did not feel comfortable eating regularly.

As she often does when faced with a problem, Alba decided to get creative.

Experimenting With Healthier Plant-Based Desserts

Alba began experimenting in her small kitchen, determined to create plant-based desserts that would be gentler on blood sugar. Her first attempts were far from successful. Some had grainy textures, others tasted unusual, and several versions of her “healthy frosting” failed completely.

After plenty of trial and error, she eventually found her rhythm. She discovered that natural ingredients such as dates, ripe bananas, and roasted fruit could provide enough sweetness without the need for refined sugar. In many recipes, their natural flavour was more than enough.

Rediscovering the Comfort of Dessert

“I realised I did not actually miss sugar,” Alba explains. “I missed the ritual of having dessert. I missed the comfort it gave me.”

That realisation changed her entire approach. Instead of trying to recreate traditional cupcakes or cakes without sugar, she started preparing dishes that were naturally sweet and satisfying in their own way.

Simple Desserts Made With Natural Ingredients

Her favourite creations included baked apples topped with cinnamon, chia pudding finished with a drizzle of vanilla, and warm quinoa served with berries and almond milk.

The dishes were simple, comforting, and easy enough for almost anyone to prepare. They did not rely on complicated techniques or expensive ingredients. More importantly, they allowed Alba to enjoy dessert without feeling that she was compromising the eating habits that helped her feel better.

Enjoying Dessert on Her Own Terms

Alba now shares her plant-based dessert creations on social media. Alongside her recipes, she often posts thoughtful reminders that eating well does not require people to give up pleasure or comfort.

“Dessert is not bad,” she says. “You simply have to enjoy it on your own terms.”
